Banquet halls go from empty to full and back again, often with a lot of food in between. The risky time is the day after a big event, when food waste, spills and bags of garbage are still around. Clean under tables, stages and kitchen equipment right after each event, get garbage out the same night and keep loading doors closed. How do you get rid of drain flies in a commercial kitchen?

Drain flies are small, fuzzy, moth-like flies that breed in the slimy film inside floor drains, sink drains and floor cracks where water sits. Spraying the adults doesn't help, because new ones keep hatching from the drains. The fix is scrubbing the drains with a stiff brush and an enzyme or bio-foam cleaner that breaks down the film, and repeating it on a schedule. We'll find which drains they're coming from and set up a plan with your kitchen staff.

Rats can chew through wood, drywall, plastic, soft mortar, aluminium and even weak or cracked concrete. Their teeth never stop growing, so they gnaw constantly. Solid concrete and steel will usually stop them, which is why we seal entry holes with steel mesh, sheet metal or concrete instead of foam or caulk. If you see fresh chew marks or a hole about the size of a quarter, call us.

How do I find a wasp nest?

Watch where the wasps go. On a sunny afternoon, stand back and follow their flight path. They fly in a fairly straight line to and from the nest. Common spots are under eaves and deck boards, inside sheds, in hedges, in the ground and in gaps in siding or brick. If you see wasps going into a hole in a wall, don't seal it. Call us to treat it first.

Late summer weddings are prime time for wasps, which are drawn to sweet drinks, desserts and food scraps. Walk the grounds a week or two before the event and look for nests in trees, hedges, gazebos, tents and under eaves, so they can be treated in time. How do bakeries and delis keep ants out?

Sugar, flour, syrups and meat juices attract ants, especially pavement ants that come up through floor cracks and odorous house ants that show up after rain. Wipe down counters and display cases at closing, keep sweets covered, and seal cracks along the floor and walls. Do carpenter bees damage wooden pergolas and patios?

Accepted Answer

Yes. Restaurants and banquet halls with wooden pergolas, patio covers, benches and fences are a favourite target, especially if the wood is bare or weathered. The bees drill round holes about a centimetre wide and come back to them every spring. Painting or staining the wood is the best prevention. Do fruit flies come from drains?

They can. Fruit flies breed in the gunk that builds up inside sink drains, garbage disposals and floor drains, not just on fruit. To test it, tape a clear plastic bag over the drain overnight. If there are flies in it in the morning, the drain is the source. Scrub the inside of the drain with a stiff brush and use an enzyme drain cleaner for a week or two. Boiling water alone usually isn't enough.

Are carpet beetles harmful to people?

They don't bite or sting, but some people get an itchy rash from the tiny hairs on carpet beetle larvae, which can look a lot like bed bug bites. The bigger problem is damage to wool rugs, sweaters, blankets and stored clothing. Vacuum carpet edges, under furniture and inside closets, wash or dry-clean wool items and store them in sealed bags. If you're getting bites and can't find bed bugs, carpet beetles are worth checking for.
